“Romancing the Stove” Soups - an Excellent Source of Protein

The base of our soups is lentils, which are also called dal. They are the main source of protein in our diet. In combination with rice or bread, lentils will provide you with an excellent source of protein. Smaller lentils are faster cooking and easier to digest. Our favorites are Mung dal (small yellow lentils, which may also be called moong beans), and Musoor dal (small red lentils).

The most important factor in cooking dal is to add the herbs and spices according to the Phoron technique (see RTS, page 45).
